I doubled the recipe so I could make a pound cake, and try it out as a cupcake as well.
A lot of my cupcakes did fall, and I think I may have overloaded my bundt pan.
The glaze is super easy to make and soaked right into the cake, giving it a little extra zing.
I did make one little switch. I live in Wyoming, so fresh key lime juice is a challenge, and I had some Mojito flavored syrup, so I tried that instead.
These were delicious, and my family and friends could not stop eating them!
This took first place at the fair, and the Judges Choice ribbon!
