Freshwater

Located in the wilds of Wyoming, the name Freshwater was chosen as a Western analogy to Christ. Just as He is the Living Water, and we must have Him to have eternal life, any desert dweller knows the importance of fresh water to life, both for self, and the nourishment of crops or livestock. By taking nourishment in God and His word, we strengthen our own relationship with Him, our faith, and the quality and abundance of our fruitfulness.

Our keystone verse is from Jeremiah, Chapter 17, Verse 8: "For he shall be as a tree planted by the waters, and that spreadeth out her roots by the river, and shall not see whenSave heat cometh, but her leaf shall be green; and shall not be careful in the year of drought, neither shall cease from yielding fruit."

The fruit that we speak of is mentioned in Galatians 5:22
"22But the fruit of the Spirit is love, joy, peace, longsuffering, gentleness, goodness, faith, 23Meekness, temperance: against such there is no law."

And the heat could be anything we experience that might test our faith in God; trials and tribulations, relationships, anything that focuses our love and attention anywhere but on Him...

Coyote's Coffee Den - Penrose, CO


 We tried out the local eatery recently when visiting my folks in Penrose, Colorado. It had been recommended to us multiple times, on multiple occasions, by multiple people, including my folks who had tried it the weekend before, so we thought we'd give it a shot...we enjoyed it so much we ended up having a take out lunch from there one more time before we left!

We did pick up and eat at home, which is a great, convenient feature they have, with a pickup window at the back so if you call in your order ahead of time you don't have to wait.

Want to skip the line? We have a pickup window in the back of the restaurant for orders that are called in ahead: 719-372-3012. There are two reserved parking places in the back, look for the bright red signs indicating 10 minute parking.


They have plenty of shady outdoor seating, and even live music on Sunday mornings in the summertime. The menu is varied and delicious, and they have a large variety of coffee drinks as well.





If you're traveling near Penrose, Colorado, or even just spinning by on Highway 115 or Highway 50, you should drop by Coyote's Coffee Den and give it a try!


Here are the things we tried on our first visit! They are all from the lunch menu.


The first one is Dad's regular order, the Smothered Beef and Bean Burrito - Seasoned ground beef and refried beans in a flour tortilla smothered in spicy green chile.


Paul had this one, Apple Chicken Salad Croissant, and you can order a half.  Chicken, raisins and apples in a cream cheese mayo, with the potato salad.


Mom and I shared this one and there was plenty of food for both of us.
Oriental Chicken Wrap - Chicken,almonds,cilantro,red bell pepper, baby greens & sesame Oriental dressing in a spinach wrap. We chose the Southwest Slaw.

All sandwiches come with chips, a pickle, and choice of: potato salad, Southwest ‘slaw or a side of baby greens with choice of dressing.

The next time (when I forgot to take pictures), Mom had the Oriental Chicken Wrap with the greens, Dad had the burrito, Paul had Pete's Panini with potato salad- Pete's Panini - Roast beef, provolone & horseradish sauce grilled on sourdough, and I had Veggie Italian Panini 9.89 Artichoke hearts, roasted red peppers, black olives, red onion, mozzarella, Parmesan and basil-pesto spread grilled on focaccia bread, with Southwest Slaw.
